Sweet Potatoes

Sweet Potato is a nutritious food, and it tastes really good (especially for a southern boy). The problem with it for diabetics is that it's high in carbs. That's not a good thing at all.

The solution is to prepare it in a mixture with lower carb foods, to reduce the effective carbs per serving.

One of the good things about sweet potatoes is that its taste blends well with cinnamon, which seems to improve carb processing in diabetics.

Another food that blends well with sweet potato is pumpkin. And, pumpkin itself is pretty low carb, a serving of pumpkin is about 100g with about 8g of carbs. Just use canned pumpkin, not a pumpkin pie mixture which has a lot of sugar added. We won't need any added sugar.

Cook a large sweet potato (or 2-3 medium sized ones). Bake it, boil it, microwave it, just cook it until it softens up.

Mash it together with a half stick of margarine and a splash of milk. Add a dash of clove or nutmeg and a tablespoon or so of cinnamon. Add half a can of mashed pumpkin (about 400 grams). Mash together while cooking over low heat. Add about 6oz of chopped pecans
