Bitter Olive Salad
2 tbsp Balsamic vinegar
chop 4-5 slices bitter melon (de-seeded).
1 chopped celery stalk
2-3 onion slices, chopped
1/4 cup chopped green olives
1/3 tbsp horseradish
couple of dashes of red pepper flakes
2 tbsp grated Parmesan cheese
Combine all ingredients. Mix well. Marinate from 2 hours to a couple of days.
Serve as a topping for Italian sandwiches, hamburgers, etc.
